A flavorful and easy dish combining tender chicken thighs with fresh spinach, tangy lemon, and savory olives.
Season chicken thighs with salt and pepper.
Heat 1 tbsp olive oil in a pan over medium heat.
Cook chicken thighs until golden and cooked through, about 6-8 minutes per side. Remove and set aside.
Mince garlic and add to the same pan, cook for 1 minute.
Add olives and cook for another 2 minutes.
Squeeze lemon juice over the pan.
Add spinach and cook until wilted, about 2 minutes.
Return chicken to the pan to warm through.
Serve hot, garnished with lemon slices if desired.
For extra flavor, add herbs like thyme or oregano during cooking.
